Ingredients (1 serve) :
1 tsp honey
1 tbsp butter
1/2 cup mixed berries
Toppings: 1 tbsp coconut yoghurt, 1 tsp almond butter, seeds
Seperate the egg yolks and whites. Whisk the honey and egg yolk together and beat the egg whites until thick and fluffy. Fold the egg white mixture in with the egg yolks.
Melt the butter in a non-stick fry pan on low-medium heat. Pour the egg mixture into the pan and sprinkle the berries on top. Cook over low heat for approx 5 minutes. Transfer the pan to the oven and grill until the top is light brown. The omelette should be cooked but still very fluffy.
Serve with coconut yoghurt, almond butter and mixed seeds.
