Easy and healthy stuffed kumara which make a great weeknight dinner! Just bake the kumara ahead of time – the remaining chilli is ready in 20 mins! Baked kumara is the nicest way to have kumara (in my opinion) it comes out so creamy and delicious!
Ingredients (serves 4)
4 medium sweet potatoes
1 Tbsp olive oil
1 small onion diced
2 cloves garlic, chopped finely
500gm premium beef mince
1 cup diced tomatoes or 1/2 jar of passata sauce
1 tsp sea salt
2 tsp chilli powder
1 tsp cumin
1/2 tsp smoked paprika
1 cup chopped courgette
1 cup chopped broccoli
1/2 cup grated cheese
Oregano and spring onions to garnish
First, bake your kumara- preheat your oven to 180° C and wrap each potato in aluminum foil and place on a baking sheet. Bake in the preheated oven for about 1 hour and 15 minutes or until completely soft in the center. The size/shape of your potato will affect the baking time!
While you bake (or reheat) your sweet potatoes, make the chili. Heat a med/large skillet over medium heat. Add your oil, then diced onions and garlic and stir to coat. Once softened, add the beef, breaking up lumps to evenly brown. Add the salt and spices and stir, cooking the beef until browned – about 3-4 minutes. Add the tomatoes, chopped courgette, brocoli and simmer for 5-10 more minutes, lowering the heat to avoid burning.
Cut open your sweet potatoes, stuff, top with cheese, oregano and spring onions if desired, and bake in oven for another 5-8 minutes until cheese has melted.
