Slow Cooker Bean, Lentil & Rice Chilli
This super easy vegetarian/vegan dish will be your new favourite #meatlessmonday dish!

Ingredients (4 serves) :
1 red onion, chopped.
2 garlic cloves, minced.
2 carrots, chopped
1/2 head cauliflower, chopped into florets
1 can tinned tomatoes
1 can butter beans (or any other beans)
1/2 cup brown lentils, dry.
1/2 cup black rice
2 cups vegetable broth
1 tsp coriander
1 tbsp cumin
1 tsp oregano
1 tbsp chilli powder
1 tbsp paprika
2 tbsp Olive Oil
Method
In a large pot, heat oil over medium heat. Saute onion, garlic, carrots, coriander and cumin for 3-5 minutes.
Add the cooked mixture into your slow cooker. Top with all remaining ingredients and give it all a good stir. Cover and cook on high for 3.5 hours or low for 5-6 hours.
Serve with sour cream, sliced avocado and coriander.
