This fresh, tasty, simple salad will make a great side to your main summer dishes! BBQ season is about to kick off!
Ingredients (serves 4)
1 kumara, peeled and chopped into chunks
1 red onion, chopped into chunks
200g cherry tomatoes, halved
1 bag of baby cos lettuce
1 avocado, sliced
1 orange, chopped into small chunks
1/4 cup toasted sunflower/pumpkin seeds
For The Dressing: 1/4 cup apple cider vinegar, 1/4 cup olive oil, 2 tbsp honey, 2 tsp wholegrain mustard
Pre-heat the oven to 180 degrees C and pre-line a baking tray with baking paper. Place the kumara and red onions on the baking tray and drizzle with olive oil. Bake in the oven for 20 minutes until cooked.
Prepare the salad by chopping up all the ingredients. Toast the seeds by heating a fry pan on low heat with some olive oil. Cook them until nicely toasted (about 3-5 minutes).
Prepare the dressing by placing all ingredients in jar and shake to combine.
Combine all ingredients together then top with the toasted seeds. Season to taste.
