I have recently made a rule in our house to incorporate "Meatless Mondays". This hummus is a perfect accompaniment for any veggie dish. It goes well with vegetables fritters, egg based dishes, roast vegetable salad or stir-frys.
Ingredients (makes 7-10 serves)
1 medium kumara, chopped into small chunks
1 can chickpeas, rinsed and drained
2 tbsp tahini
1 lemon, juice squeezed
2 cloves garlic
1 tsp cumin
1/4 cup olive oil
1/2 tsp salt
Preheat the oven to 180°C and pre line a tray with baking paper. Place kumara across baking paper and drizzle with some olive oil then bake for 20 minutes until cooked through.
Place the kumara, chickpeas, tahini, lemon juice, garlic, cumin , salt and olive oil in a blender and blend until smooth. Add in extra olive oil if you prefer a smoother consistency.
Keep stored in fridge for up to 8-9 days and add into your meals for extra flavour and fibre.
