Roasted Chickpeas

Ingredients (3 serves) :

  • 1 can organic chickpeas, drained and rinsed

  • 1/4 tsp chilli powder

  • pinch of salt

  • 1/4 tsp ground cumin

  • 1/4 tsp paprika

  • 1/4 tsp ground coriander

  • 1/4 tsp curry powder

  • 1/4 tsp garlic powder


  1. Preheat oven to 180 degrees on fan bake.

  2. Drain chickpeas in a colander and rinse thoroughly. Pat dry with a paper towel.

  3. Pre-line a tray with baking paper and place chickpeas scattered on tray in oven for 35-45 mins until golden brown or crunchy, not moist.

  4. In a medium bowl, combine all spices and remove chickpeas from oven when done. Spray with extra virgin olive oil and toss with the spices when hot. Eat at room temperature or store in a sealed container for up to 3-4 days.
