One Tray Bake Dukkah Chicken with Vegetables

Who else loves a one tray bake dish which takes minimal time to prepare and cook? I do! You can use any spices/ herbs that you have or just plain salt/ pepper with a bit of olive oil. I used some Dukkah seasoning (which you can get from the supermarket) as I love the taste of this!

Ingredients (2 serves)

  • 2 medium chicken breast, cut in half (or 4 x chicken thighs)

  • 2 capsicum, sliced in chunks

  • 1 courgette, sliced

  • 1 bunch asparagus, de-steamed and chopped

  • 1 medium kumara, chopped into small chunks

  • Extra virgin olive oil

  • 2-3 tbsp Dukkah

  • 1 tsp paprika

  • Salt/ pepper

Method

  1. Pre-heat the oven to 180 degrees C on bake and pre-line an oven tray with some baking paper.

  2. After prepping ingredients, place the chicken and vegetables on the tray. Drizzle with olive oil. Season the chicken breast with Dukkah and the vegetables with paprika and salt/ pepper.

  3. Bake in oven for 20-25 minutes until chicken nice and tender.

  4. Serve with extra spinach/ kale and some toasted pumpkin/ sunflower seeds.
