Coconut Quinoa and Lentil Curry

Ingredients (2 serves):
2 cups small diced kumara
1/2 cup quinoa, rinsed
1/2 cup brown lentils
1/2 yellow onion, diced
1/2 can coconut milk
2 1/2 cups vegetable broth
1 teaspoon curry powder
1 teaspoon salt
1 teaspoon ground ginger
1/ teaspoon ground corriander
1/2 teaspoon black pepper
Optional garnish: chopped cashews, fresh coriander
Method
Add all ingredients to a large pot and stir until combined. Bring mixture to a boil, reduce to a simmer and simmer until liquid has absorbed and quinoa, lentils and sweet potato are cooked through, 35-45 minutes. Garnish with chopped cashews and fresh coriander, if desired.
** For males or physically active females, add an additional 250g pumpkin.
