Muesli Bars

Ingredients (12 serves) :
1 cup nuts and seeds of choice (I used 1/2 cup each of chopped almonds, walnuts, pistachios and sunflower seeds)
1 cup GF oats (can use GF)
½ cup flaked coconut toasted
½ cup dried fruit of choice I used dried cranberries
2 tablespoons chia seeds
1 teaspoon cinnamon
1/2 cup honey
100g coconut oil
1 teaspoon vanilla extract
Method
Preheat oven to 170 °C. Line a square baking tin with baking paper.
Melt coconut oil and honey together in a medium-size pot or in a medium-sized bowl in the microwave. Stir in oats, nuts, dried fruit, chia seeds, coconut, cinnamon and vanilla and mix to combine.
Use the back of a spoon to firmly press mixture into lined baking tin and bake for 25-30 minutes until golden brown on top. When it comes out of the oven, press down on it with the back of a spoon again to make it firmer (so it doesn’t crumble apart).
Leave to cool in the tin then refrigerate for at least 1-2 hours until firm, before removing and cutting into small bars. Will keep in an air-tight container for about a week.
