#MeatlessMondays an easy vegetarian meal is back! These lentil patties are packed full of B Vitamins, fibre, protein & Vitamin C! A great alternative to your usual beef patties (for when you feel like something different). Top with your favourite hummus, avocado or our famous green dressing.
Ingredients (makes 6-7 patties)
1/2 onion, diced
1 celery stalk, diced
1 carrot, diced
1 small kumara, chopped into small cubes
1 heaped tbsp curry powder
1 tsp paprika
1/4 cup breadcrumbs (if going Gluten free swap for more rice flour)
1/4 rice flour
1 can lentils, drained and rinsed
Heat 1 tbsp olive oil in a large frying pan and add the onion, celery and carrots. Reduce to low and cook for 5 minutes.
Place the kumara in the microwave on high and cook for 4-5 minutes.
Transfer the mixture into a bowl then add the spices, rice flour, breadcrumbs, lentils, kumara, egg and season to taste. Mix to combine.
Divide the mixture to form patties.
Heat 1 tbsp olive oil in a fry pan and cook the patties for 4-5 minutes each side. Serve on a large bed of green salad.
