These gluten free, tasty muffins are a great winter's treat! With an abundance of lemons everywhere, this is a perfect afternoon snack with a cup of herbal tea.
Ingredients (makes six)
1/2 cup rice flour
1/2 cup almond meal
2 tbsp coconut oil, melted
1 lemon, juice and rind
2 tbsp honey
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup greek yoghurt
For the icing: 50g butter, 2 tbsp icing sugar, 1/2 lemon, juice.
Preheat the oven to fan-bake at 180 ° C and spray six muffin trays.
Combine the dry ingredients then add the wet ingredients and mix. Pour mixture evenly into the muffin tray. Bake in oven for 15-20 minutes until light brown.
To make the icing- melt butter slightly and beat (do not melt too much just so it is soft to beat). Add in the icing sugar and lemon juice and then evenly place on muffins. Garnish with some lemon rind.
