Lemon & Macadamia Slice

Gluten and dairy free with a hint of lemon for those sweet lovers. Use up those lemons before they go out of season!



Ingredients (makes 10 small slices)


For the Base

  • 1 cup dates

  • 1 1/2 cups desiccated coconut

  • 1 cup almond meal

  • 2 tbsp coconut cream

  • 1 tbsp peanut butter

For the Topping

  • 2 cups macadamias

  • 2 tbsp honey

  • Zest and Juice of one lemon

  • 3 tbsp coconut oil

  • 1 tbsp coconut cream

Method

  1. Line a 20cm loaf tin with baking paper.

  2. Soak the dates in hot boiling water for 10 mins. Drain the water.

  3. Add the dates into the blender and mix. Add remaining base ingredients into blender and combine/ mix until it resembles a crumbly mix. Press the mixture firmly into the base of the prepared tin.

  4. Place macadamias into blender and blend until smooth. Add the remaining ingredients, blend and then pour over base. Place in freezer to set.

  5. Slice into 10 small slices. Eat and enjoy x
