Ingredients (1 serve):
1/2 cup drained kimichi
1 tbsp juice from kimichi jar
1/2 tsp tahini
2 slices paleo toast or sourdough
1/2 tsp sesame seeds
Small handful of coriander
In a small bowl, whisk together the kimchi juice and tahini. Add about 1 tablespoon warm water to thin out sauce. Season to taste with salt and set aside.
Place avocado on top of each piece of toast and mash the avocado into the toasts with a fork. Sprinkle each one with a generous pinch of salt.
Divide the chopped kimchi evenly among the toasts and drizzle each with tahini mixture.
Sprinkle the sesame seeds and coriander evenly the toast.
** For males or physically active females, add an additional two poached eggs.
