Herb Crusted Salmon

Ingredients (2 serves) :

  • 2 salmon fillets

  • 2 tbsp coconut flour

  • 2 tbsp fresh parsley

  •  2 tbsp olive oil

  • 2 tbsp dijon mustard  

For the Salad 

  • 2-4 cups spinach

  • 4 tbsp sauerkraut 

  • 1/2 red onion, thinly sliced

  • Juice of 1 lemon 

  • 2 tsp white wine vinegar

  • 2 tbsp olive oil 


  1. Preheat oven to 180 degrees. Pre-line a tray with baking paper.

  2. Top the salmon with olive oil and dijon mustard. In a small bowl, whisk together your parsley, coconut flour and salt/ pepper. Rub this onto the salmon. Place in oven for 10-15 minutes or until salmon is cooked to your liking.

  3. While salmon is cooking, mix together the salad ingredients.

  4. Serve salmon on top of salad and enjoy!

** For males or physically active females, add an additional 1/2-1 cup brown or basmati rice.
