Green Zucchini Pasta

Ingredients (2 serves) :

  • 2 Zucchini noodles ( I used a spiralizer for this otherwise you can use a vegetable peeler) 

  • 1 head broccoli florets, chopped

  • 1 onion, chopped finely 

  • 2 garlic cloves, minced

  • Handful of cherry tomatoes, chopped in half 

  • 2 handfuls of spinach 

  • Protein source: add chicken/ prawns/ beef/ tofu/ fish

For the Green Dressing:

  • Small handful parsley

  • Small handful coriander

  • Small handful basil

  • 1/4 cup flaxseed or olive oil

  • 1/4 cup water

  • 1 clove garlic

  • Small handful cashews

  • 1 tsp wholegrain mustard

  • 1/2 lemon juice

  • 1-2  tbsp apple cider vinegar

  • Salt + pepper to taste

Method

  1. For the dressing: Add all ingredients into a blender and blend until smooth!

  2. Heat a pan over medium heat with 1 tbsp olive oil. Add garlic and onions and mix to combine for 3-5 minutes. Add your protein source (chicken/ fish/ beans/ tofu/ meat) and cook for another 7-10 minutes. Add spinach and zucchini noodles and cook for another 3-4 minutes. Stir in the cherry tomatoes and green dressing and mix to combine.

  3. Garnish with coriander and seasoning.

** For males or physically active females, add an additional 1-2 cups roasted pumpkin
