It will take you no longer then five minutes to whip up this salad which will make a great light lunch meal or side dish for a summer BBQ! Chop and change the ingredients to whatever you have in the fridge. I would of added lemon juice too but didn't have any handy so went without and it still tasted great! Feel free to add an extra protein source like chicken, prawns, fish, tofu, boiled eggs, etc if you feel like you need it.
Ingredients (2 serves)
1 can chickpeas, drained and rinsed
1/2 cucumber, chopped
2 tomatoes, chopped
1 small handful of basil/ parsley
70g feta, crumbled
1/2 head broccoli, chopped into small florets
3-4 tbsp balsamic vinegar
3-4 tbsp extra virgin olive oil
Place everything in a large bowl and mix to combine. Does last in the fridge for up to one week.
