This is a very basic recipe with minimal ingredients but still tastes amazing! Add in any vegetables and swap the cream for coconut cream if you want to go dairy free.
Ingredients (4 serves)
500g fresh white fish, chopped into chunks
1 onion, diced
3 cloves garlic, diced
400-500g kumara, chopped
2 cups fresh green beans
1 capsicum, sliced thinly
2 heaped tbsp tomato paste
1 cup cream
1.5 tbsp curry powder
1 tsp turmeric powder
Heat a fry pan over medium heat with a dash of extra virgin olive oil. Saute' the onions and garlic for a few minutes.
Add in the curry powder, turmeric and tomato paste. Saute for another couple of minutes. Add the kumara, capsicum, green beans and cream. Leave to simmer on low for 20-30 minutes until kumara is cooked.
Add in the fresh fish and simmer on low for another 5 minutes (until fish is cooked which won't take long).
Season to taste and serve on rice or just as is.
