Egg & Veggie Scramble

This has got to be one of my favourite breakfast ideas! I always recommend to my clients to get at least six servings of vegetables in everyday (equivalent to six handfuls). Having an egg based or savoury breakfast is a sneaky way to get a couple of servings of vegetables in! 

Ingredients (serves 1) 

  • 2 eggs

  • 1 cup mushrooms, chopped 

  • 1/2 head broccoli, chopped into florets 

  • 1/2 capsicum, chopped up small handful parsley, finely chopped 

  • 1/2 leek, finely chopped

  • 2 pieces of paleo toast 

  • 1 tsp sweet soy sauce 


  1. Heat a fry pan over medium heat with some olive oil and add the leeks. Cook for 1-2 minutes. Add in the mushrooms, capsicum and broccoli (you can use any vegetables you have in the fridge). Stir to combine for another few minutes. 

  2. Crack in the 2 eggs and mix to combine for another minute or so until the eggs are cooked to your liking.

  3. Serve on 2 pieces of paleo toast, garnish with parsley and a drizzle of sweet soy sauce.
