Ingredients (2 serves) :
4 hard boiled eggs
2 handfuls of greens
2 handful of sliced cucumber
1/2 punnet tomatoes, chopped
2 tbsp sauerkraut
Small handful chopped parsley and basil
Seasoning/ salt/ pepper
Dressing- 1 tbsp red wine vinegar, 4 tbsp olive oil & 1/2 squeezed lemon
Mix everything into a bowl and add the dressing along with a sprinkle of seeds such as sunflower/ pumpkin or chia seeds.
** For males or physically active females, add an additional 1/2-1 cup complex carbs (e.g rice, quinoa, pumpkin or kumara).
