Easy Go-To Green Salad

Ingredients (2 serves) :

  • 4 hard boiled eggs 

  • 2 handfuls of greens  

  • 2 handful of sliced cucumber 

  • 1/2 punnet tomatoes, chopped 

  • 2 tbsp sauerkraut 

  • Small handful chopped parsley and basil 

  • Seasoning/ salt/ pepper 

Dressing- 1 tbsp red wine vinegar, 4 tbsp olive oil & 1/2 squeezed lemon 


  1. Mix everything into a bowl and add the dressing along with a sprinkle of seeds such as sunflower/ pumpkin or chia seeds.

** For males or physically active females, add an additional 1/2-1 cup complex carbs (e.g rice, quinoa, pumpkin or kumara).
