Cucumber & Strawberry Mint Salad

This refreshing summer salad will go great as a side to BBQ’s or any other main dish. This takes less then 5 minutes to prepare and contains no more then 5 ingredients! 

Ingredients (serves 4-5) 

  • 1 whole cucumber, sliced very thinly 

  • 1 punnet of strawberries, cut in half or quarters

  • 1/2 cup mint leaves 

  • 3 tbsp olive oil 

  • 2 tbsp balsamic vinegar 

  • Pinch of salt 


  1. Place all ingredients into a salad bowl and mix to combine.

  2. Season with salt and serve immediately or keep in fridge for up to 3-5 days. Get creative and use different dressings such as a raspberry vinaigrette or a lemon date dressing- Enjoy x
