Coconut French Toast

French toast has to be one of our favourite breakfasts! Most of the time you feel sick after eating French toast out at a cafe or restaurant because it is full of refined sugar! We have created a healthier version of this dish that tastes just as good, makes you feel satisfied, nutrient dense and will not make you feel sick afterwards! 

Ingredients (serves 2) 

  • 4  slices of coconut bread (or any GF/ paleo/ wholemeal bread) 

  • 1 egg

  • 1/2 cup Unsweetened coconut milk 

  • 1/2 tsp organic vanilla essence 

  • 1/2 tsp cinnamon 

  • 1 tbsp coconut oil 

Toppings: 2 slices  free range bacon, frozen berries, flaked almonds, shredded coconut, banana, coconut jam, maple syrup 

  1. Method

  2. Heat the coconut oil in a frying pan over medium heat.

  3. Combine the egg, milk, cinnamon and vanilla essence into a bowl and whisk. Dip the bread into the mixture and coat evenly on both sides. Add bread to frying pan and cook until brown on both sides. 

  4. Lightly fry the bacon and banana in a different pan until cooked to your liking.

  5. Place 2 slices of bread on each plate and top with your favourite toppings! We used bacon, banana, flaked almonds, berries, maple syrup and shredded coconut!
