These gluten free spiced cookies are the perfect holiday treat + they are super easy to make!
Ingredients (makes 10-12 small)
1 1/2 cups almond meal or flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp baking soda
1 tsp nutmeg
1 tsp mixed spice
100g butter, melted
1/2 cup coconut sugar
2 tbsp honey
1 tsp vanilla extract
Pre-heat oven on fan bake to 180 degrees.
In a large bowl, mix the butter and coconut sugar until fluffy.
Once fluffy, add the eggs and honey. Beat well then add the vanilla extract.
In a seperate bowl, whisk together your dry ingredients. Once mixed, sift your dry ingredients into your larger bowl of wet, and mix until a dough forms.
Take heaping tablespoon pieces of dough, roll into a ball, and place onto a prepared baking tray. Flatten down with a fork and sprinkle with more mixed spice or cinnamon.
Place in oven for 12-14 minutes until cooked. Garnish with ginger icing sugar.
