These all natural protein balls makes a healthy snack and are all sweetened with dates and a little bit of honey, instead of a typical protein bar that are usually packed with added sugar. If you don’t have almonds, you can substitute frequently with any other sort of nuts you have handy.
Coconut oil is great for recipes like this. It is liquid when warm and solidifies when cold, so when you chill the energy balls the solidified coconut oil helps to bind them together.
Do be sure to use a food processor for this. A blender tends to leave you with everything stuck together in the bottom.
Perfect afternoon snack or after dinner when you feel like something sweet!
Ingredients (makes 10-12)
1 cup almonds
1 cup dates (soaked in boiling water for approx 30 mins)
1 tbsp peanut or almond butter
3 tbsp coconut oil
3 tbsp cacao powder
2 tsp cinnamon
1/2 orange, rind and juice squeezed
1 tbsp honey
1 scoop vanilla plant protein
Process the almonds until they are like crumbs. Add the rest of the ingredients and process until well combined.Using wet hands, roll the mixture into balls and place on a plate or container. Chill in the fridge for an hour to set (if you can wait that long) and enjoy as a healthy eating snack.
