Chicken Cashew Nut Stir-Fry

This super easy stir-fry is packed full of flavour and nutrients! Perfect for a 20 minute meal that you need to whip up throughout the week.
Ingredients (serves 4)
450gm chicken breast
1 head broccoli, florets chopped
1 capsicum, chopped finely
1 onion, diced
2 garlic cloves, diced
1 tsp ginger, grated
1 courgette, chopped finely
1 bunch asparagus, chopped
1/3 cup cashews
2 cups cooked basmati rice
Coriander to garnish
For the Sauce
3 heaped tbsp Pic's peanut butter
5 tbsp tamari sauce
1 tbsp ginger
2 tbsp honey
1 tbsp olive oil
2 tbsp water
Method
Heat 1 tbsp olive oil in a fry pan over medium heat. Sauté the onions, garlic and ginger then add the chicken and brown. Turn down to low heat.
Add the vegetables and cook for another 5-7 minutes.
Whisk the sauce ingredients together in a small bowl. Pour the sauce into the fry pan and stir to combine. Cook for another 3-5 minutes.
Garnish with the coriander and cashew nuts. Serve on top of cooked basmati or brown rice.
