Chicken Cashew Nut Stir-Fry

This super easy stir-fry is packed full of flavour and nutrients! Perfect for a 20 minute meal that you need to whip up throughout the week.

Ingredients (serves 4)

  • 450gm chicken breast

  • 1 head broccoli, florets chopped

  • 1 capsicum, chopped finely

  • 1 onion, diced

  • 2 garlic cloves, diced

  • 1 tsp ginger, grated

  • 1 courgette, chopped finely

  • 1 bunch asparagus, chopped

  • 1/3 cup cashews

  • 2 cups cooked basmati rice

  • Coriander to garnish

For the Sauce

  • 3 heaped tbsp Pic's peanut butter

  • 5 tbsp tamari sauce

  • 1 tbsp ginger

  • 2 tbsp honey

  • 1 tbsp olive oil

  • 2 tbsp water


  1. Heat 1 tbsp olive oil in a fry pan over medium heat. Sauté the onions, garlic and ginger then add the chicken and brown. Turn down to low heat.

  2. Add the vegetables and cook for another 5-7 minutes.

  3. Whisk the sauce ingredients together in a small bowl. Pour the sauce into the fry pan and stir to combine. Cook for another 3-5 minutes.

  4. Garnish with the coriander and cashew nuts. Serve on top of cooked basmati or brown rice.
