Chicken and Herb Patties

Ingredients (2 serves):

  • 250gm chicken mince

  • 1/2 large onion, diced finely 

  • Small handful of parsley, finely chopped 

  • Small handful of coriander, finely chopped 

  • Small handful of basil, finely chopped

  • 1 garlic cloves, chopped finely or minced

  • 2 Heaped Tbsp almond meal 

  • 1 egg 

  • Olive oil for frying

Method

  1. In a bowl, mix ingredients together until well combined.  Form into even sized patties. Heat oil in frying pan on a low-medium heat. Once hot, add the patties and cook for 3-5 minutes, until golden brown before flipping and repeating until fully cooked.  Remove from pan and place onto a plate with tin foil over them. Allow the chicken patties to stand for 5 minutes before serving.

  2. Serve on a wholemeal or paleo bun with lettuce, grated carrot/ beetroot, tomato, gherkins, bean sprouts, tomato chutney or our amazing green dressing! Or add two handfuls of greens with some sauerkraut.
