Broccoli Soup

Ingredients (2 serves):

  • 1 head broccoli, chopped into chunks (use the whole broccoli)

  • 1 potatoe, chopped into chunks

  • 1 onion, diced

  • 2 garlic cloves, diced

  • 1/2 leek, sliced thinly

  • 2.5 cups chicken stock

  • 1 tsp salt

  • 1/2 tsp nutmeg

  • 2 tbsp olive oil

Method

  1. Saute onions, garlic and leek over medium heat with the olive oil for 5 minutes or so. Add in the broccoli, potato, salt and chicken stock. Simmer for approx 15-20 minutes until potatoes are cooked.

  2. Add the nutmeg then blend with a stick blender until nice and smooth. Season to taste.

** For males or physically active females, add an additional two pieces of sourdough toast.
