Ingredients (2 serves):
1 head broccoli, chopped into chunks (use the whole broccoli)
1 potatoe, chopped into chunks
1 onion, diced
2 garlic cloves, diced
1/2 leek, sliced thinly
2.5 cups vegetable stock
1 tsp salt
1/2 tsp nutmeg
2 tbsp olive oil
Saute onions, garlic and leek over medium heat with the olive oil for 5 minutes or so. Add in the broccoli, potato, salt and chicken stock. Simmer for approx 15-20 minutes until potatoes are cooked.
Add the nutmeg then blend with a stick blender until nice and smooth. Season to taste.
** For males or physically active females, add an additional two pieces of sourdough toast.
