This 20 minute broccoli soup is a great way to boost your fibre intake and get those extra greens in the day! You can have this as a yummy snack or easy lunch/ dinner meal.
Ingredients (serves 4-5)
2 heads broccoli, chopped into chunks (use the whole broccoli)
2 potatoes, chopped into chunks
1 onion, diced
2 garlic cloves, diced
1 leek, sliced thinly
5 cups chicken stock
1 tsp salt
1 tsp nutmeg
2 tbsp olive oil
Saute onions, garlic and leek over medium heat with the olive oil for 5 minutes or so. Add in the broccoli, potato, salt and chicken stock. Simmer for approx 15-20 minutes until potatoes are cooked. Add the nutmeg then blend with a stick blender until nice and smooth. Season to taste.
