Bounty Balls

I honestly think these are incredible and such a great healthy alternative. I love bounty bars but they are packed full of refined sugar. I wanted to come up with a substitute that would satisfy my sweet cravings without the blood glucose spike. Gluten Free and Vegan.

Ingredients (makes 8 balls)

  • 1 cup desiccated coconut

  • 1/2 cup canned coconut cream

  • 1/4 cup coconut flour

  • 2 tbsp honey or maple syrup

  • 100g dark or milk chocolate chips

  • 2 tbsp coconut oil

Method

  1. Combine all ingredients together in a bowl, except the chocolate and coconut oil.

  2. Roll the balls and put in the freezer for about an hour.

  3. Melt chocolate with the coconut oil over low heat and evenly coat the ball.

  4. Store in the fridge and enjoy!
