These amazing and super quick to prepare crackers are a great alternative to store-bought ones. Not only do they taste amazing but they are packed full of fibre, Omega-3, zinc, protein and B Vitamins! Have as a snack with hummus, homemade pesto, sliced tomato and avocado, peanut butter and banana- the list goes on! You can use any sort of seed but ensure you use chia or flaxseeds as this is what binds all the ingredients together.
Ingredients (makes approx 10 crackers)
3/4 cup pumpkin seeds
3/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup chia seeds
1 cup water
Preheat oven to 170 degrees on fan bake.
Place all the seeds and the salt in a bowl, pour in water and mix to combine. Leave for 15 minutes for the chia seeds to soften and bind everything together.
Tip out on to a baking paper-lined oven tray and spread out as thin as possible and sprinkle with some flaky sea salt. Bake for 25 minutes.
Remove from the oven and slice into crackers, then return to the oven to cook for another 20-30 minutes until crisp and golden. Remove to a rack to cool then store in an airtight container. Eat immediately or store for one week!
