Chocolate Peanut Butter Slice

Chocolate Peanut Butter Slice

This has got to be one of my favourite sweet treats by far! It is gluten and dairy free and will satisfy those sweet cravings after dinner. This is a no bake option!

Ingredients (approx 10-12 slices)

For the base:

  • 1 cup almond meal
  • 1 tbsp coconut oil, melted
  • 2 tbsp cocoa powder
  • 1 tsp honey

For the filling:

  • 1/2 cup smooth, natural peanut butter (I used Pic’s)
  • 1 tbsp coconut oil, melted
  • 1/2 tsp salt
  • 1 tsp coconut sugar

For the topping:

  • 50g or 1/4 cup chocolate chips
  • 1 tbsp cocoa powder
  • 2 tbsp coconut oil, melted
  • 1 tsp honey

  1. Pre-line a small loaf tray with baking paper. Mix the base ingredients together and place firmly down into the bottom of the tray. Place in freezer while you prepare the filling.
  2. To prepare the filling, melt the coconut sugar and oil together and then add into the peanut butter. Stir to combine with the salt. Place filling on top of the base layer and into the freezer.
  3. To prepare the topping, place all ingredients into a sauce pan over low heat until it is all combined. Pour topping over the filling (let filling set in freezer) and place back in freezer for another hour or so. Serve cold straight from the freezer or place in fridge to melt slightly then enjoy!
